Carrot Broccoli Omelette
2 eggs with shells (washed)
2 tbs low-fat ricotta cheese
1/4 cup shredded or finely chopped carrots
1/4 cup finely chopped broccoli
Mix ingredients together. Grease frying pan with organic red palm oil. Scramble eggs until firm.
